Acetaia Sereni, led with intense and quiet focus by Pier Luigi Sereni, is a member of the Modena Consorzio Produttori, a limited group of artisan producers who are committed to the highest traditionally established standards for the production of Aceto Balsamico. Made in small batches from Trebbiano and Lambrusco grape varieties grown in the hills above Modena, Acetaia Sereni offers a range of vinegars and condiments from young (3 to 5 years of age) to well-aged and concentrated (25 to 44 years of age), striving to strike the fine balance of agrodolce – sweet and sour. Pierluigi Sereni enjoys pursuing different ideas and combinations as a parallel activity to the
rigid compliance he adheres to with the traditions of the Consorzio. Lo Speciale is a
combination of wine vinegar and mosto, while it doesn’t have the layered flavor charm that distinguishes aged
Balsamico, it boasts a sweet and sour component that is a fun item to have in
the pantry.
